One of our new Seafood Specials: Cornish pot-caught dressed Brown Crabs (aka: Edible or Pasty Crabs) are in season so Chef/Owner Mandie can order them in and is creating her take on Basque Txangurro (Shangurro).
She scoops out the meat, which is saute├ęd with very finely chopped red onion and garlic. She adds a splash of white wine, salt and pepper, freshly chopped parsley and tarragon and then pops it back into the shell. The crab is dotted with butter and then baked for 15 minutes.
